The Nutrition Installation is a unit responsible for managing hospital nutrition services. If food services in the nutrition installation are not handled properly, it can lead to food contamination. One of the diseases transmitted through food is caused by the bacterium Eschericia coli. RSUD Cikalong Wetan faces issues such as food handlers not using complete Personal Protective Equipment (PPE) during food processing, weak building construction, and a damaged exhaust system in the processing area. The aim of this research is to assess the implementation of 6 principles of hygiene sanitation, examine Eschericia coli samples, and evaluate the knowledge of food handlers. This study uses a descriptive method with total sampling technique, involving 10 respondents and 1 environmental sample. Data collection methods include observation, interviews, and examination of food samples. Research findings indicate that in the stages of food storage, storage of cooked food, and laboratory testing, the criteria are met 100%. Sorting meets 94.1%, food processing meets 90%, food transportation meets 93.7%, and food presentation meets 95.2% of the criteria. Food handlers' knowledge shows 80% categorized as good among 8 respondents, while 20% categorized as adequate among 2 respondents. Eschericia coli examination results show negative/gram for the Sayur Lodeh sample and <3.6 MPN/g for the Steamed Fuyunghai sample. Recommendations include adding clean trolleys to prevent food stacking during transportation, repairing the deteriorated warehouse building and cracks in the food preparation area, labeling each food item, and providing PPE such as hair covers and waterproof shoes for food handlers.
