Abstract

A restaurant is a food processing center where various types of food and beverages are produced and sold. Restaurants in Sumberjaya Village, South Tambun District do not carry out quality assessment of food and food handlers have not implemented it properly. The purpose of this study was to determine the food processing methods in restaurants in Sumberjaya Village, South Tambun, Bekasi Regency. This type of research is descriptive research, conducted by interview and observation. Environmental samples were 10 Padang restaurants and human samples were 23 respondents with purposive sampling technique. The results of observations of food processing places from 10 restaurants were found to be 6 qualified and 4 unqualified, aspects of food processing equipment from 10 restaurants were found to be 9 qualified and 1 unqualified, sanitation facilities from 10 restaurants were found to be 10 unqualified, the knowledge of food handlers is very good category 7 people (30.4%), good 3 people (13%), enough 12 people (52.3%), food handlers are expected to have awareness to improve the application of sanitary hygiene in restaurants both personal hygiene and food safety.
