One effort to prevent fiber and vitamin C deficiency is making ice cream products that contain high levels of fiber and vitamin C where the additional ingredients are obtained from brown rice bran and crystal guava</em>. <em>The aim of this research is to determine the effect of red rice bran and crystal guava formulations on the quality of ice cream products including organoleptic properties, fiber content and vitamin C levels. This study used one-factor completely randomized design with 3 formulations of brown rice bran and guava crystals namely F1 (15%:85%), F2 (25%:75%) and F3 (35%:65%). The research method used the hedonic test to determine the organoleptic properties, enzymatic gravimetry for the fiber test and iodimetri titration for the vitamin C test. Formula F1 (15%:85%) was the best formula that contains 5.19 g of fiber and 38.4 mg of vitamin C, thus fullfilled a daily requirements of fiber and vitamin C for elementary school children approximately 20% and 80% in one serving (80 g). The Kruskall Wallis test revealed that there was an effect of different formulations of red rice bran and crystal guava ice cream on the color, taste and overall of the ice cream (p&lt;0.05). The production cost of F1 ice cream is IDR 3,000/80 g. DAN TEPUNG MOCAF (Modified Cassava Flour) SEBAGAI SELINGAN TINGGI SERAT https://jurnal.polkesban.ac.id/index.php/jgd/article/view/1797 <p><em>Onde Ketawa made from purple sweet potato flour and mocaf flour is a high-fiber food product. The purpose of this study was to determine the formulation of purple sweet potato flour and mocaf flour on the quality of onde ketawa as a food interlude that contains high fiber so that it can be given to Diabetes Mellitus patients. The design in this study was experimental with a completely randomized design (RAL). The research method used was hedonic test for liking level and gravimetric enzymatic for food fiber content test. This study involved 30 moderately trained panelists. The data analysis used was Kruskal Wallis then continued with the Mann Whitney test. The hedonic test results showed that formula 2 with a balance of 50% purple sweet potato flour: 50% mocaf flour had the highest level of liking in the aspects of color, taste and overall. The results of the Kruskal Wallis test showed that there were differences in the aspects of taste and overall. The fiber contained in formula 2 is 10.6 grams per 100 grams. Balanced nutrition is needed to student for their growth period. Most of elementary school student do not know about balanced nutrition because they are still focused on the concept of “4 sehat 5 sempurna” where they think that eating rice should be more than side dishes and vegetables, even some said that drinking milk alone is enough and does not need other food. </em><strong><em>Purpose:</em></strong> <em>This research aims to determine the effectiveness of providing nutrition education using flashcard and powerpoint media on increasing knowledge, attitudes and behavior of balanced nutrition in students of SDN Pasirkaliki Mandiri 2 Cimahi. </em><strong><em>Method:</em></strong> <em>The research design used was a quasi-experimental with pre-test and post-test control group. The sample using purposive sampling with 62 samples. Statistical analysis using Paired T-Test, Wilcoxon and T-Independent. </em><strong><em>Results:</em></strong> <em>The results shows that there is an increase in knowledge about balanced nutrition in the intervention group (p=0.000) and the control group (p=0.000), attitudes in the intervention group (p=0.014) and the control group (p=0.004), behavior in the intervention group (p=0.004) and there was no increase in behavior regarding balanced nutrition in the control group (p=0.398). <strong>Conclusion:</strong> There is no difference in the average increase in knowledge, attitudes and behavior of balanced nutrition between flashcard educational media and powerpoint media. </em><strong><em>Recommendation:</em></strong> <em>Flashcard educational media needs to be redeveloped both from the appearance and from the choice of language used to attract students so as to get better results.</em></p> <p><strong><em>Key words:</em></strong><em> Nutrition Education, Flashcard, Powerpoint, Balanced Nutrition</em></p> Nanda Tsania, Mamat Rahmat, Witri Priawantiputri, Roro Nur Fauziyah Copyright (c) 2023 Jurnal Gizi dan Dietetik https://jurnal.polkesban.ac.id/index.php/jgd/article/view/1800 Thu, 28 Dec 2023 00:00:00 +0800 ASUPAN ORAL INADEKUAT, PERUBAHAN NILAI LABORATORIUM, PERILAKU SALAH TENTANG MAKANAN PADA PASIEN CHRONIC KIDNEY DISEASE https://jurnal.polkesban.ac.id/index.php/jgd/article/view/1738 <p><strong><em>Background:</em></strong><em> Chronic Kidney Disease (CKD) is a disease that attacks the kidneys and the condition gradually worsens, becomes chronic or persistent, and lasts a long time. The prevalence of chronic kidney disease cases in Indonesia according to basic health research (Riskesdas) in 2018 was 0.38%. Hypertension is one of the risk factors often found in kidney failure. Prolonged increase in blood pressure in arterioles and glomeruli will cause sclerosis of blood vessels. <strong>Case:</strong>&nbsp; Mr.U aged 50 years experienced nutritional problems inadequate oral intake, changes in urea and creatinine values, and wrong behavior about food during hospitalization</em> <em>patient's medical diagnosis are CKD and hypertension. <strong>Results and Discussion</strong>: Providing an initial low protein diet of 0.6 and then at the end of treatment to high energy high protein on HD 1.2 gr/kg </em><em>ideal body weight</em><em> in a soft form adapted to the patient's ability </em><em>has purpose</em> <em>to</em><em> increase patient intake. The dietary requirements given at the beginning of the intervention were energy 2047.5 kcal, protein 35.1 g, fat 68.25 g, carbohydrates 323.5 g. The results of monitoring and evaluation showed that during observation on the third day, the patient's energy intake reached 75%. The results of urea and creatinine also decreased, physical/clinical showed reduced tightness but still experienced post-hemodialysis nausea. Collaboration was carried out together with </em><em>doctor</em><em>, nutritionists, nurses, and waiters. Website Carrd.co is a website platform that can be developed for free, with interesting displays, and easy to use&nbsp;for&nbsp;newbies. This research used a pre-experimental design with the pre-post test. The research was conducted in March-April 2023 at SLB Negeri 2 Sentra PK/PLK and SLB C Tut Wuri Handayani. The respondents of this research were 12 people who were determined by total sampling. The data collected included characteristic respondents, mother’s knowledge, children’s nutrient intake, and children's eating frequency. The intervention was measured using a knowledge questionnaire and Semi Quantitative Food Frequency Questionnaire (SQ-FFQ). The normality test uses the Shapiro Wilk test, and the analysis test uses the Paired T-Test Dependent (data normally distributed) and the Wilcoxon Test (data not normally distributed). The results showed that there were significant differences in the average knowledge of mothers (p value 0.026), children's energy intake (p value 0.004), children's protein intake (p value 0.001), children's fat intake (p value 0.001), children's carbohydrate intake (p value 0.005), and the frequency of children's eating (p value 0.025) before and after the intervention. Inadequate nutrient intake during adolescence will have an impact on health in subsequent life stages, namely adulthood (pregnant mothers) and old age. One of the efforts that can be done to address nutritional problems in adolescent girls is to change their behaviors by enhancing their knowledge through nutrition education. One of the nutritional education media used for targeting adolescent girls is the social media platform <em>Instagram.</em> The aim of this research was to determine the effect of balanced nutrition counseling using the social media platform <em>Instagram</em> on knowledge, energy intake, and protein intake among high school adolescent girls. The intervention was conducted for a total of 9 days over a period of 18 days. This study is <em>a quasi-experiment</em> with <em>a two-group pre-test and post-test design</em>. The treatment group was provided with the social media platform <em>Instagram</em>, while the control group was provided with <em>PowerPoint media</em>. The sample size consisted of 64 participants divided into two groups: the treatment group and the control group, using <em>purposive sampling</em> method. The data were analyzed using the Wilcoxon test, Dependent t-<em>test</em>, Independent t-<em>test</em>, and Mann-Whitney test. The research findings revealed that there was an influence of nutrition counseling on knowledge, energy intake, and protein intake in the treatment group. Similarly, there was an influence of nutrition counseling on knowledge, energy intake, and protein intake in the control group. There was a difference in knowledge between the treatment group and the control group among adolescent girls. However, there was no difference in energy intake and protein intake between the treatment group and the control group among adolescent girls. Dragon fruit juice and <em>chia seeds is a product that rich in antioxidants, high in fiber, and a source of vitamin B and vitamin C so it can help reduce total cholesterol levels. The purpose of this study was to determine the effect of red dragon fruit juice and chia seeds on total cholesterol levels in hypercholesterolemic patients. This research design used a quasi-experimental two-group pre-post test. Samples were taken by purposive sampling of 32 samples which were divided into two groups. The intervention group was given 215 ml of red dragon fruit juice and chia seeds for 7 days and nutrition education, while the control group was given nutrition education. This research was conducted in February-March in the working area of the Pasirkaliki Health Center. The data collected included age, sex, medical history, education, occupation, weight, height, intake of fat, fiber and cholesterol, and total cholesterol levels. The results showed that there was a significant difference in the average cholesterol levels before and after the intervention group was given (p&lt;0.05). In the control group there was no significant difference in the mean cholesterol levels before and after the intervention (p&gt;0.05). There was a significant difference between the average total cholesterol level in the intervention group and the total cholesterol level in the control group (p&lt;0.05) with an average reduction of 23.25 mg/dl. In Islamic boarding schools, intake is not given enough attention because of the large number of students. Intake of nutrients can affect nutritional status. The purpose of this study was to determine the relationship between energy intake and macronutrients (carbohydrates, fat, and protein) with the nutritional status of female santri at Pondok Pesantren Salafiyah Al-Jawahir. The research design used was cross sectional with proportional random sampling technique being used as a sample. Retrieval of food intake data using the SQ-FFQ method. Nutritional status is obtained from BMI/U parameters. The sample used was 54 people. The results showed that there was no significant relationship between energy intake and nutritional status (p=0.140), there was no significant relationship between protein intake and nutritional status (p=0.120), there was no significant relationship between fat intake and nutritional status (p = 0.087), and there was no significant relationship between carbohydrate intake and nutritional status (p = 0.303). Inadequate complementary foods can lead to malnutrition and cause developmental delays and decreased body immunity. The research aimed to determine the relationship between exclusive breastfeeding and the accuracy of giving complementary feeding (MP-ASI) to the incidence of stunting in toddlers aged 6-23 months in Bansari District. The research design used was analytical observational with a cross-sectional approach. The research was conducted in Bansari District with a sample of 85 toddlers in June 2023. The independent variables used were exclusive breastfeeding and complementary feeding while the dependent variable was stunting. Data collection were done using observations, questionnaires, and anthropometric measurements. The instruments used were characteristic questionnaires, exclusive breastfeeding, complementary feeding, and recall forms. Data analysis used Chi-Square (α = 0.05). The prevalence of stunting in toddlers aged 6-23 months in Bansari District is 25.9%. There are 37.6% of toddlers in Bansari District who do not receive exclusive breastfeeding. 62.4% of toddlers in Bansari District were given complementary feeding incorrectly. The results of the analysis test showed no relationship between exclusive breastfeeding and the incidence of stunting in toddlers aged 6-23 months in Bansari District (p = 0.518) and there was no relationship between the accuracy of giving complementary feeding and the incidence of stunting in toddlers aged 6-23 months in Bansari District ( p = 0.718).
